Randell's Smokehouse Seasoning Recipes

Steak Prep

1 stick of "real" butter
2 Garlic cloves chopped
1 tablespoon Parsley
1 tablespoon Thyme
1 teaspoon lemon zest
Olive Oil
Randell's Smokehouse Seasoning
Cast Iron Skillet

This prep works best with Flank Steak. You can also use it with your favorite cut of beef.

Lightly coat the steak with Olive Oil. Add Randell's Smokehouse Seasoning and secure in zip-lock bag. Refrigerate for 6 hours or overnight.

Allow the steaks to warm to room temperature after taking out from the fridge. Prepare ½ stick of the butter, mix with chopped garlic, cloves, thyme, parsley, and lemon zest and place in fridge.

Place cast iron skillet in the oven while pre-heating oven to 450 degrees. Grill steaks no more than 6 minutes per side to get a good sear. Once the oven gets to 400 degrees, coat bottom of the cast iron skillet with olive oil and add second ½ stick of butter. Let the butter melt and mix with olive oil. Pull steaks off the grill and immediately put into the skillet. Make sure the center of the skillet temperature has reached 400 degrees or as close as possible. Pull butter mix from the fridge and place evenly on top of the steak(s). Cover with foil and place skillet in the oven. Bake at 450 degrees for 5 minutes. Remove from oven and let sit 2 minutes before serving. Then Enjoy!

This is excellent with steamed Broccoli, butter, steamed white rice and your favorite blend of Randell's Smokehouse Seasoning!

Chimney Onion

1 large yellow onion
3 tablespoons butter
4 tablespoons of Randell's Smokehouse Seasoning (adjust for taste)
2 sheet of heavy duty foil

Cut off stem and root of onion, remove dry outer layer. Cut a shallow cap from the top of the onion (like you would on the lid of a pumpkin). Cut a deep V-shape cavity from the middle of the onion. Line the inside of the onion with half the butter. Fill remaining cavity to the top with Randell's Smokehouse Seasoning. Cover top of seasoning with remainder of butter. Place onion cap back on the top of the onion. Place the core cut-out upside down on the cap of the onion. Place onion in the middle of the 2 sheets of foil. Fold sides of foil up around the onion and slightly close off to create a chimney. Place onion on the grill or on bed of coals. Cook for up to 20 minutes or until onion has a sauted look. Serve immediately as a side dish or place on your favorite dish as a garnish.

Roasted Brussels Sprouts

Randell’s Southwest Chipotle Seasoning

Clean and cut brussels sprouts in half, generously rub with olive oil and Randell's Chipotle Seasoning. Bake in the oven for 30 minutes, shaking pan every 5 minutes to turn.

Note: Outside will turn a deep brown when they are done, this is a good thing!

Texas Chipotle Stir Fry

1 lb bag of frozen Stir Fry Vegetables
1 1/2 tbsp Olive Oil
3 small pork and beef sausage links
Randell's Southwest Chipotle Seasoning

Slice sausage links into bite size pieces. Coat the bottom of a 9" pan with Olive Oil. Add vegetables and sliced sausage. Coat with a generous layer of Randell's Southwest Chipotle Seasoning. Cover and cook on medium high for 15 minutes. Stir occasionally. Reduce heat to low and cook for another 5 minutes. Turn off heat and serve.
